I’m turning into a boring cook. The truth is, I really messed up one of my knees running, and rushing around in the kitchen doesn’t have as much appeal when I’m in pain the whole time.
Anyway, I managed to make the world’s best burritos, so that’s good. Brown rice, baby spinach, roasted Anaheim peppers, portobello/red onion/bell pepper fajitas, salsa, cashew sour cream, guacamole, and tomatoes in a green tortilla. Tasty! But not very impressive.
